Road Trips from Boquete

I am not sure which worldly sage made the statement that an army travels on it’s stomach but he was correct, I will add, so do tourists. We travel from taste treat to taste treat and there are few more exciting ways to travel in Panama. On the Interamerican Highway in the town of Capria is the Chela cheese store.
On this trip our friends who have been here for many years were training their new car to pull into the best of the best and magically we arrived at Chela.

Chela is not a well kept secret, in our few minutes procuring fresh baked goods, cheese and native cashews the parking lot was a constant churn of activity. People come for the cheese.

The soft cheeses on the top right are flavored country cheeses, the packaged cheeses below are mozzarella rolls with olives and my favorite picante.

Yogurts and various country cheeses round out the offering. A tribute to life and decadent pleasure. These are not the cured aged cheeses of the world but young fresh country or mozzarella cheese; simple and tasty. If you live in the US and cannot place country cheeses think farmers cheese or Mexican Queso Fresco and then add texture and flavor.

It is a bit hard to read but instead of low fat, low taste cheese Chela has “Doble Crema” more milk fat more mouth more culinary pleasure in every bite.

The thing I like best about the country cheeses is to slice them and then toast them in a skillet. Yummmm. Nothing better.
Quesos Chela in Capira
We love the place. I can probably count on one hand the number of times that we have driven by and haven’t stopped. We usually get various cheeses, the yogurt and the cheese empanadas (if you haven’t tried them, you are missing a real treat).
